Ingredients

PASTRY INGREDIENTS

  • 1000 gr All-purpose Wheat Flour BOLA SALJU
  • 40 gr sugar15 gr salt1 egg
  • 50 gr Butter / Margarine
  • 450 gr cold water
  • 500 gr Butter Sheet Pastry / Korsvet  

 

FILLING INGREDIENTS

  • 200 gr Smoked Beef Meat (cut into pieces)
  • 200 gr Tomatoes (cut into pieces)
  • 100 gr All-purpose Wheat Flour BOLA SALJU
  • 100 gr Mozzarella Cheese
  • 200 gr broth4 cloves of garlic (finely chopped)
  • 2 gr Pepper Powder
  • 5 gr Powder Broth
  • 10 gr salt
How to Make
  • Mix the BOLA SALJU All-Purpose Flour, sugar, and salt. Stir until well blended.
  • Add the eggs and water, stir until it forms a dough.
  • Add butter, increase mixer speed to medium, stir for 5-6 minutes (not smooth)
  • Remove and let the dough stand for 1-3 hours in the freezer.
  • Thin the dough with a thickness of ± 8mm, place the butter then fold it like an envelope.
  • Roll the dough lengthwise 5-7 mm thick, do single folds.
  • Let the dough stand for 15 minutes in the freezer.
  • Thin again, double fold, let stand for 15 minutes in the freezer.
  • Throw back, do single folds again and let stand in the freezer again for 30 minutes.
  • Thin the dough with a thickness of 4mm. Cut the size 8cm x 8cm, cut the sides fold to the left and fold to the right.
  • Fill with the filling, arrange the smoked beef and tomatoes.
  • Polish the top surface with an egg beaten.
  • Bake in the oven at 180⁰C for 35 minutes or until cooked. Remove and chill.

 

HOW TO MAKE FILLING

  • Roast the flour until cooked. Remove and set aside.
  • Saute garlic, ground pepper, powdered stock, salt and mozzarella cheese.
  • Add the roasted flour and broth, cook until cooked and thick.
  • Remove and chill.
  • Filling ready to use.
