NOODLE INGREDIENTS
- 1000 gr GOLDEN EAGLE Flour
- 15 gr salt
- 2 eggs
- 240 gr water
SOY SAUCE CHICKEN INGREDIENTS
- 1 whole chicken (for 4)
- 150 gr Red onion
- 80 gr Garlic
- 1 knuckle Ginger
- 3 finger segment Galangal
- 1 turmeric finger segment
- 4 gr Pepper Powder
- 3 bay leaves
- 2 stalks of lemongrass
- 3 tbsp Sweet Soy Sauce
- Sufficiently Salt
- Sufficiently Sugar
CHICKEN OIL INGREDIENTS
- 500 gr cooking oil
- ½ tbsp Pepper (whole)
- 1 tbsp coriander
- 3 knuckles Ginger
- 5 cloves of garlic
- 200 gr Chicken Skin
How to Make
HOW TO MAKE NOODLES
- Dissolve the salt in the water, add the eggs, stir until blended.
- Pour the solution water into the flour slowly while stirring by hand, do this until the solution runs out.
- Press the dough into the plastic, let the dough stand for 10 minutes.
- Thin the dough using a noodle making machine, grind it thinly until the surface is smooth.
- Cut to make noodle strands, sprinkle the noodles with sago, set aside.
HOW TO MAKE SOY SAUCE CHICKEN
- Separate the chicken meat from the skin, cut into cubes. Set aside.
- Blend all spices, set aside.
- Saute the spices until fragrant, add the chicken meat. Cook the chicken over low heat until the spices are absorbed, add the sweet soy sauce, salt and sugar, and cook until cooked.
- Ready to use.
HOW TO MAKE CHICKEN OIL
- Coarsely grind pepper, coriander, garlic and ginger.
- Heat oil, add chicken skin.
- Pour in the spices.
- Cook until the chicken skin dries.
- Strain and set aside.
PRESENTATION
- Prepare a bowl, pour 2 tablespoons of chicken oil. Add soy sauce, MSG and pepper then set aside.
- Boil the noodles and vegetables (use mustard greens and bean sprouts if desired) until cooked.
- Drain and pour into a bowl, mix well.
- Add the soy sauce chicken on top.
- Serve hot.
